Good sake is made from good rice. Kuze Sake Brewery is a unique brewery that has been cultivating its own original sake rice “chosei mai” to produce high quality sake since it was established in 1786. Water is the other essential element of sake. Kuze uses two different types of water to brew sake, hard water drawn from their own well and soft water from the local spring called “shozu” to realize different texture of sake.
